Recipe for Gingerbread men
This recipe is to make traditional gingerbread men. Its an old-time favourite with children of all ages. Its a quick and straightforward recipe to bake.
This recipe makes about a dozen large gingerbread men.
Soft brown sugar
All purpose flour
1 1/2 tsp
Choc chips for eyes
Pieces of candied peel
Electric mixer (not essential)
Spoon for mixing
Gingerbread men cookie cutters
Two or three non-stick heavyweight baking sheets
Flat knife to lift cookies
Put on a kettle of water to boil.
Set the oven to warm up to 350F, Gas Mk 4.
Take the top of the molasses and the syrup and put them in a medium bowl. Fill the bowl with the hot water from the kettle, about half way up the container. This will make them runny for measuring later.
If you do not have non stick baking sheets then butter/ grease the ones you are using.
Put the butter and sugar in the mixer bowl and cream together on high speed for five minutes until the mixture is pale in color.
Add the molasses and syrup and cream for another three minutes.
While the mixture is creaming, weigh the sifted flour into another bowl, add the salt, baking powder, ground ginger and mixed spice, mix gently, and set aside.
When the creaming is complete pour the flour mixture into the mixer bowl and mix by hand at first. This moistens the flour.
Return to the mixer and continue on high speed for another two or three minutes. Use a spatula, if necessary, to pull the ingredients together and make sure it is all well mixed. The mixture looks quite dry and ‘mealy’.
Flour a work surface for rolling. Take half of the mixture knead it gently in your hands for a minute or two. This will get it to stick together just enough for rolling.
Roll it out quite thinly and cut out the cookies with the gingerbread men cutter. Place them on the oiled/ greased sheets. You can place them close together as, being a dry mixture, they spread very little.
You can decorate with peel or choc chips. Press them intothe surface so they stick.
Place in the oven. Bake for 8 to 10 minutes, until nicely brown round the edges. Don’t let them burn, or you will loose the spice flavors.
Allow to cool on the sheets for two to five minutes. Then use the flat knife to slide them onto a rack to finish cooling.
